Israel recently passed a law to require them to serve, and Gallant had already sent out draft orders.
I haven't seen anything about a new law that would renew the exception to service, but there might be one.
EDIT: Looks like he cleaned that up in a later tweet...
"Israeli minister of defense Gallant who was fired by Netanyahu today amid of a war, because he opposed a law that exempts ultra-orthodox men from military service, finished his speech by saluting to the IDF soldiers." ( Source)
