I am 300 yards from Windsor Castle.
Got the Sunday papers, a rightwing and a social democrat broadsheet.
A pint (first of several) and will shortly have roast beef, Yorkshires, all the veg, gravy, English mustard and half a bottle of claret.
Beat that.
Oh and they're playing some good hard rock on the speakers. AC/DC after Iron Maiden.

I live not very far from Dijon, where you get the best mustard in the world. What would I do with English mustard?

With roast beef I generally only use a little salt, and a little pepper. If cooked correctly, that's all I need. If the beef is poorly done, there's always the stew pot.
Oh, maybe some mashed potatoes with butter on the side, and maybe some veggies like broccoli.

What would I do with English mustard? Enjoy one of the finest varieties of mustard on the planet.. Colman's.. It is the standard by which mustard is judged ..
Dry of course.. Try to always make your own .. Mustardy compounds are quite volatile and dissipate rather quickly. An acid (wine or vinegar) slows the reaction ..
Dijon is excellent .. It's my go-to mustard if I'm making a pan sauce or as an emulsifier in vinaigrette..
