I love chicken. No doubt about that. So between buying pre-cooked chicken at the local Costco (great deal!) and getting fresh chicken parts and grilling them out back, I pile up a fair amount of chicken bones.
So what do I with with them? I store them in a freezer in a sealable plastic bag. When the bag gets full, I make broth.
How? Well some time ago I acquired an "Instapot Duo" pressure cooker, that's how. It's awesome, and can make a lot more than just broth, but that's primarily how I use it. Interestingly, I looked it up today and found it's going for about twice what I paid for one years ago. Go figure.
The latest broth effort was a big success. The broth was rich enough in various proteins like collagen that it actually jelled in the fridge. Yay!
What's that saying? Oh yeah, "Waste not, want not."
Also, the Instapot is going on Amazon now for about twice what I paid for it a few years ago.
And yes, I make bone broth from beef and pork bones, as well. But generally it's chicken.

I have an Instant Pot that I use for several recipes including making stocks.. beef, chicken, vegetable.. I like to buy whole chicken and break it down myself.. cheaper and the back portion makes the best stock IMHO .
As you say.. freeze all the bits and pieces and make stock when the need arises..
I also freeze a lot of stocks in pint plastic bottles ( I tried the ice tray method.. fuck that) so if I'm wanting to deglaze a saute pan or add a bit of umami to a dish it's just a few minutes in the microwave away ..

A few years ago I picked up a bunch of little plastic (polypropylene) bowls with covers at Costco (might have been at their business center), and use them to freeze broth. Each comes with a cover (with closeable vent) and can hold 3 cups. Generally I only add about 2.5 cups of broth before freezing (to make room for expansion). These are easy to store, and thaw.

I cook the grits for my shrimp grits in a broth made from the shrimp heads and shells. Tip of the Day: always mix grits into cold water for no clumping, lumping, or sticking.

Never made grits. In fact, I don't recall ever eating grits. Not that there's anything wrong with grits.
