The ballots are basically set. A lot of the deadlines for certifying the candidates have passed (more than when we last had this conversation). If they tried this, they would likely end up having to sue to have Vance's name removed and replaced on the ballot, just like RFK Jr is having to do in several states (e.g., here, here, and here).
Furthermore, some people will be voting by mail soon.
And there's not really any upside to dropping Vance now. The VP is about catering to the base (same reason Obama picked Biden, Biden picked Harris, and Harris picked Walz). Picking Haley isn't going to do that.
